AccellGreen™ - Cleaning of High Temperature Food Processing Equipment

Less is More – lower pH, less hazardous, more cleaning effectiveness...

Advanced BioCatalytics Corporation (ABC) has products in its AccellGreen™ family that are used in both manual and semiautomatic recirculating rotisserie ovens, grills, hoods, shelves, and other cooking applications, especially where burnt-on, charred on residues are very difficult to remove.  A key and unique feature of the cleaner is that it reduces and prevents build-up of burnt-on residues on stainless steel equipment with repeated, regular use.

The other major benefit over typically used cleaners for such applications is that the product is safer for the user. The pH of AccellGreen™ is approximately 6-8, versus other cleaners that are usually highly caustic with pH typically between 12 and 13.  ABC's AccellGreen™ Oven & Rotisserie Cleaner provides a much safer alternative that also improves cleaning time.

In some states, the use of caustic cleaners is highly regulated. Costs of handling the used waste product, plus the additional costs to ship hazardous product to the facility, can be high.  There are no disposable issues with P-SS™ based AccellGreen™. Ingredients meet FDA guidelines for use in food contact areas.  These compounds are environmentally benign and pose no issues when discharged to the drain, where the product keeps on working in degreasing the drain line.

Figure 1 shows results with high-temperature food processing equipment.

Figures 2 and 3 reflect results for analogous uses. It follows from these and other tests, that:

  1. AccellGreen™ is efficient in removing partially caramelized and carbonized depositions from stainless steel surfaces in the high temperature meat processing equipment. AccellGreen™ has high surface energy activity, allowing AccellGreen™ to penetrate and release caramelized and carbonized deposits from the stainless steel surfaces.
  2. Another benefit of AccellGreen™ is that it reduces the affinity of the food-derived contaminants to bind to stainless steel surfaces, especially their byproducts of caramelization and carbonization caused by the high use temperatures.
  3. Cleaning is achieved with an essentially neutral pH (6-8), solvent-free, water-borne solution, which gives it substantial advantage over alternative cleaning products that operate at extremely high pH levels in the range of 12 to 13 pH, in many instances also including hazardous solvents.
  4. Replacing more conventional, highly alkaline cleaning tools with the neutral ABC product makes the entire cleaning operation safer for the staff.
  5. Reducing the conversion of food-derived products to caramelized and carbonized material on the surfaces of equipment in subsequent cleaning cycles results in less labor and shorter duration of the cleaning procedure, thus significantly reducing the cost of cleaning.

OTHER USES

Although the tests below were not conducted on stainless steel surfaces, the neutrality of Advanced BioCatalytics’ solutions permits application to such alkali-sensitive materials as aluminum, zinc, ceramic and epoxy coatings.

Essentially the same procedure was applied as in the rotisserie oven test, except this treatment was completed at room temperature.
